Portioning of Masses Directly into Forms

The lowerable filling device for bread boxes KFE consists of a dough portioner of the HPE series and a filling unit. The dough is fed to the KFE and portioned into the baking tins by means of a Filling Flow Divider and filling heads. A magnetic conveyor belt ensures precise feeding of the tins to the filling heads. The filling heads are lowered after the sensors detect the baking tins.The speed of the dough portioner and the conveyor belt are perfectly synchronized, which allows optimal positioning e.g. of whipped batter in the form. This lays the foundation for an even baking result.

The Rotary Filling Head863 and the dough portioner of the HPE series can portion rye, whole-grain, and gluten-free doughs as well as a wide variety of masses directly into baking tins and tin clusters. The line achieves an output rate of up to 75 portions per minute and operates with maximum weight accuracy.

The dough portioner VDD807 with integrated cutting device and conveyor belt was specially developed for gentle, continuous and oil-free dough portioning. With portioning rates of up to 320 portions per minute and portion sizes from 100 g to 2,000 g, the dough portioner guarantees exact weights and maximum flexibility, as a wide variety of doughs can be processed.

Portioning Soft Doughs and Masses Directly onto Baking Sheets and Belts

With the dough portioner of the HPE series and the Sheeting Horn, doughs and masses can be portioned with high weight accuracy and loaded directly onto baking sheets or flat-layered products. The roller width is variably adjustable and thus adaptable to different baking sheet and conveyor belt sizes. The roller closure can be adapted to customer-specific sheet sizes. The line handles portion weights from 5 g to 30,000 g. Dough portioner and Sheeting Horn are designed for optimum hygiene and can be wet cleaned using low-pressure equipment.

The dough portioner HP1 can be fitted with a Manual Filling Head. This enables precise and clean portioning, e.g. of fruit fillings, all kinds of masses, coconut macaroons, muffins, almond croissants, creams, desserts and puddings. A practical hand switch and an integrated holding device facilitate work in the bakery.

The FT722 filling table automates work steps in the bakery. Doughs or batters can be precisely deposited / portioned / loaded onto trays or automatically filled into baking tins. Various cookie doughs, batters, desserts, fillings and creams or even gluten-free doughs can be processed.

By using the table, the bakery is able to reduce the number of work steps, as a baking tray, for example, is automatically moved and loaded in the X and Y directions during use. The shape can be freely selected - lettering, symbols or logos are also possible. Thanks to the patented solution, the tray is always in the correct position. This means that cookies or cookies, for example, can be optimally placed on a tray. The table can also accommodate various baking tins, which are then filled automatically.

Cutting Dough

The cutting device ASV811 can cut a variety of doughs - whole grain, rye and mixed rye doughs, as well as wheat doughs and gluten-free doughs - reliably and cleanly. The attachment can cut up to 140 portions of shortbread, rusk or other products per minute.

The ASV811 can be combined with the dough portioner Robot500 and the dough portioners of the HPE series.

Individually adjustable portioning process for unique products

The double screw technology enables gentle processing of various masses with different consistencies - whether stiff or soft. Even large-sized inclusions such as nuts, dried fruit, and chocolate chips can be fed and portioned without any problems. In addition, doughs can also be processed with the same double screw. The weight range for portioning is between 5 g and 50 kg, depending on requirements and customer needs. Moreover, the machines do not require dividing oil neither for processing nor for dividing doughs. This saves costs and does not affect the quality of the baked goods.

Modular systems for the production of fine baked goods

Our machines are modular in design. This means that the interchangeable attachments can be quickly and easily attached to the portioner. In this way, the machine adapts to the desired quality of the baked goods and the end product. The VEMAG portfolio and modular system is available for industrial bakeries and confectioneries with a high hourly output, but also for small scale businesses. While developing and programming the control system, we made sure that the machines could be operated easily and intuitively. In general, VEMAG machine housings are made of stainless steel and are encapsulated. This prevents the ingress of product residues or flour dust. In addition, no water penetrates into the interior of the machine during possible wet cleaning. All mechanical components are easily accessible and the relevant electrical components are separately encapsulated. This proven box-in-box system is a unique selling point of our machines and guarantees both maximum hygiene and unique machine availability.
